Chili Crisp Veggie Toast

 

Ingredients:

  • 1 cup cucumber, julienne

  • ½ cup fennel, sliced thin

  • ½ cup celery, sliced thin on a bias

  • ¼ cup chives, sliced thin

  • 2 tbsp lemon juice

  • 1 tbsp rice vinegar

  • ⅕ tbsp sesame oil

  • salt and pepper to taste

  • ricotta, for garnish

  • chili crisp, for garnish

  • bread for serving

Steps:

  1. Combine cucumber, fennel, celery, chives, lemon juice, rice vinegar and sesame oil in a bowl. Season to taste with salt and pepper.

  2. On a slice of toast, place a spoonful of your salad and dress with ricotta and a healthy serving of chili crisp.
