Caramelized Kimchi & Salmon Roe Pasta R2

 

Ingredients:

• ½ pound penne pasta

• 1 cup salmon roe

• ¼ cup toasted sesame seeds

• ¼ cup tobiko, for garnish

• ¼ cup parmesan, micrograted

• 4 tbsp unsalted butter

• 2 egg yolks

• 1 ½ cup Kimchi

• 3 tbsp kimchi paste or gochujang

• 2 tbsp tomato paste

• ¼ cup chinese scallions, finely chopped

• 1 tbsp perilla seed oil

• 1 tbsp rice vinegar

• salt to taste

Steps:

  1. Cook pasta in salted & boiling water until al dente.

  2. Meanwhile, bring a pan to temp over medium heat. Add butter and kimchi, cook until caramelized.

  3. Clear a space in the pan’s center and add tomato and kimchi paste. Cook the paste for about a minute and then stir to combine. Stir in sesame seeds and perilla seed oil.

  4. Add in pasta with some pasta water and scallions, stir to combine. Cut the heat and add in egg yolks and parmesan. Stir in Salmon Roe and rice vinegar. Salt to taste.

  5. Plate and garnish with sesame seeds, scallions and tobiko.
