Spicy & Tangy Lion’s Mane

 

Ingredients:

  • 1lb lion’s mane mushrooms, chopped or torn into smallish chunks

  • 1 medium sized shallot, minced

  • 2 cloves garlic, minced

  • 4 tbsp, unsalted butter

  • 3 red thai chilis, finely chopped

  • 3 tbsp parsley, finely chopped

  • ¼ cup orange juice

  • 1 tbsp soy sauce

  • salt and pepper

Steps:

  1. Heat a saute pan very medium/high heat. Add in mushrooms and dry cook them for 5-10 minutes or until they are fairly browned. Add in butter, garlic, shallot and chilis and stir to combine. Cook until fragrant and butter is completely melted, stirring constantly (about 2 minutes). Add in orange juice, soy sauce and parsley. Stir to combine and season to taste with salt and pepper.

  2. Plate and enjoy as you like it
