Meal Prep: Pesto with Red Lentil Pasta

Ingredients:

  • Cook Pasta until just under desired texture.

  • 3 tbsp avocado oil

  • 3 tbsp unsalted butter

  • 1 shallot, finely chopped

  • 3 cloves garlic, smashed and minced

  • 2-3 whole dried chilies

  • salt and pepper

Steps:

  1. Cook Pasta until just under desired texture.

  2. Drain pasta, reserving 1 cup of pasta water and return to a med/low pan.

  3. Add pesto and half of the pasta water and stir to combine. Add more water for desired consistency. 

  4. Season to taste with salt and pepper and finish with olive oil.

  5. Place in an airtight container and top with mozzarella.
