Pebre, Egg & Avocado Arepa

Ingredients:

The Pebre

  • 2 cups chopped tomatoes

  • 1 medium white onion, diced

  • 1 medium garlic, minced

  • 1 jalapeno, stemmed and seeded,minced

  • ¼ cup cilantro, finely chopped

  • 2 tbsp red wine vinegar

  • 3 tbsp extra virgin olive oil

  • 2 tbsp hot sauce

  • Salt and pepper

The Arepa

  • 1 1/2 cups masarepa

  • 4 tbsp queso fresco, crumbled

  • 1 cup water

  • 1 tbsp avocado oil

Steps

  • Make the Pebre by combining all of the ingredients into a bowl and mix well. Let the mixture sit while you make everything else.

  • Combine all of the arepa ingredients in a bowl and mix to combine until it forms a thick paste. Work the mixture for about 5 minutes, form into a ball and then cover for 10 minutes. Divide the mixture into 4 balls and press into your desired arepa shape.

  • Heat a grill pan or skillet over medium/high heat. Lightly butter the pan and cook your arepas for about 5-7 minutes on each side.

  • Serve with Sliced avocado, a sunny side up egg and plenty of Pebre.
