Thai Chili , Mint & Watermelon Salad
Ingredients:
4 cups watermelon, chopped into teeny tiny cubes
1 cups fennel, whites and stems finely chopped
4 garlic cloves, minced
½ cup mint, finely chopped
¼ cup italian parsley, finely chopped
6 thai chilies, finely chopped
¼ cup lime juice from 2-3 limes
3 tbsp fish sauce
2 tbsp olive oil
1 tbsp ground aleppo pepper
cracked white pepper
kosher salt
a finishing salt
Steps:
In a large bowl combine watermelon, fennel, garlic, mint, parsley, chilies, aleppo pepper, lime juice, fish sauce, white pepper and olive oil. Mix together well and add salt to taste.
Serve on a toasted baguette or something of that nature. Garnish with mint, parsley and finishing salt.
