Thai Chili , Mint & Watermelon Salad

 

Ingredients:

  • 4 cups watermelon, chopped into teeny tiny cubes

  • 1 cups fennel, whites and stems finely chopped

  • 4 garlic cloves, minced

  • ½ cup mint, finely chopped

  • ¼ cup italian parsley, finely chopped

  • 6 thai chilies, finely chopped

  • ¼ cup lime juice from 2-3 limes

  • 3 tbsp fish sauce

  • 2 tbsp olive oil

  • 1 tbsp ground aleppo pepper

  • cracked white pepper

  • kosher salt

  • a finishing salt

Steps:

  1. In a large bowl combine watermelon, fennel, garlic, mint, parsley, chilies, aleppo pepper, lime juice, fish sauce, white pepper and olive oil. Mix together well and add salt to taste.

  2. Serve on a toasted baguette or something of that nature. Garnish with mint, parsley and finishing salt.
