Piri Piri Buffalo Cauliflower

Ingredients:

  • 2 heads of cauliflower, broken into florets

  • 2 quarts canola oil

  • 1/2 cup cornstarch

  • 1/2 cup all purpose flour

  • 1/2 teaspoon baking powder

  • 1 cup milk

  • additional water as needed for batter

  • 1/2 cup hot sauce

  • 6 tbsp unsalted butter, melted and kept warm

  • 1 tsp garlic powder

  • 1 tbsp red pepper flakes

  • 2 tsp adobo or another flavorful seasoning of choice

  • 3-4 oz blue cheese, broken into crumbs

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 1/2 cup buttermilk

  • 2 tbsp lemon juice

  • kosher salt & pepper to taste

Steps:

  • Preheat oil to 350°F in a Dutch Oven or similar vessel.

  • Whisk together flour, cornstarch and baking powder. Whisk in milk and water to keep the batter fairly thin, add salt, red pepper flakes, garlic powder & other desired seasonings. Mix well and toss cauliflower in the batter, making sure everything is well coated.

  • Make the blue cheese dressing by combining blue cheese, buttermilk, mayo, sourcream, lemon juice, salt and pepper (to taste) in a small bowl.

  • Fry Cauliflower in small batches, being careful not to over crowd, for about 6ish minutes until golden brown. Reheat oil between batches.

  • Whisk together the butter and hot sauce and toss your fried cauliflower in it.

  • Serve with your dressing and favorite veggies for extra dipping!
