Caramelized Kimchi & Salmon Roe Pasta R1

 

Ingredients:

  • ½ pound penne pasta (or whatever your preference)

  • 1 cup salmon roe

  • ¼ cup toasted sesame seeds

  • ¼ cup tobiko, for garnish

  • ¼ cup parmesan, micrograted

  • 4 tbsp unsalted butter

  • 2 egg yolks

  • 1 ½ cup Kimchi (I use Mama O’s or homemade)

  • 3 tbsp Mama O’s kimchi paste

  • 2 tbsp tomato paste

  • ¼ cup chinese scallions, finely chopped

  • 1 tbsp rice vinegar 

  • 1 tsp msg

  • salt to taste

Steps:

  1. Bring a pot of water to a boil, salt it and add your pasta until cooked.

  2. Meanwhile, bring a saute pan or skillet to temp over medium heat. Add butter and kimchi, stir to combine. Cook until caramelized, being careful not to let it burn.

  3. Clear a space in the center and add tomato paste and kimchi paste. Let the paste cook for about a minute and then stir to combine, adding in sesame seeds as you stir.

  4. Add in pasta, along with some pasta water, stir until you have a light sauce, adding more water if necessary. Stir in egg yolks and butter. Stir in MSG, scallions, Salmon Roe and rice vinegar. Salt to taste.

  5. Plate and garnish with sesame seeds, scallions and tobiko.
