Ground Pork & Tomato

 

Ingredients:

  • 1 lb ground pork

  • 1 medium sized onion, diced

  • 3-4 garlic cloves, minced

  • 4 tbsp olive oil

  • 2 tbsp, ground cumin

  • 2 tbsp, ground sweet paprika

  • 2 tbsp tomato paste

  • 4-6 peeled san marzano tomatoes (about half of a large can)

  • 2 cups chicken broth

  • salt and pepper to taste

Steps:

  1. Preheat half the olive oil in a 3qt saute pan. Add onions with some salt. Cook for 2-3 minutes and stir in garlic. Cook for another minute and add in pork. Using a spatula, break the pork apart in the pan, moving it around constantly for a few minutes. Add cumin, paprika and salt, stir to combine. Clear a spot in the center of the pan and add your tomato paste, after a minute or two add your tomatoes, Break them apart  with your spatula and stir in the remaining olive oil. Let cook for about 10 minutes, add salt and pepper to taste. Serve with rice or even by itself for a lighter meal.
