Egg & Kimchi Quesadilla

 

Ingredients:

  • 2 large eggs

  • ¼ cup kimchi

  • ¼ cup of grated cheddar

  • 1 large burrito flour tortilla

  • 3 tbsp of butter

  • 1 tbsp soy sauce

  • 2 tbsp mayo

  • 1 tbsp sesame oil

Steps:

  1. Heat 1 tbsp butter over medium heat in a skillet. Crack eggs directly in the pan and season with salt. After a minute or two break open the yolks using your spatula and gently move the eggs across the pan. Cook for 1 more minute and set the eggs aside.

  2. Add kimchi to the skillet and cook for a couple of minutes. Set aside.

  3. Add the remaining butter to the pan and add the tortilla once fully melted. Add eggs and kimchi to one side of the tortilla along with the cheddar. Fold the tortilla in half and cook on each side for about 2-3 minutes. Use a weight if you have one and use kimchi liquid in the pan for added color and flavor!

  4. Make a quick dipping sauce with Mayo, soy sauce and sesame oil to go with it!
