Sous Video Kimchi Marinated Pork Chops

Ingredients:

  • 2 bone-in pork chops, 1 1/2 inches thick

  • ¼ cup @mamaoskimchi paste (or a mix of gochugaru with things like minced ginger, scallions and garlic)

  • 2 tbsp soy sauce

  • 1 tbsp avocado oil

  • 4 tbsp unsalted butter

  • kosher salt

Steps:

  • Marinade pork chops with soy sauce, salt and kimchi sauce in a sealed bag for an hour or overnight.

  • Set your water circulator to the correct time and temperature settings. I’m using the Joule Turbo Sous Vide by @breville ‘pork loin center-cut chops’ setting which cooks them at 136.4°F for 90 minutes.

  • Once done, sear your chops in a hot skillet with your butter and avocado oil for a couple of minutes on each side for a nice crust.

  • I served mine with a sesame & @mamaoskimchi sauce mixed green salad.
