Kimchi Hash

 

This particular recipe is a collaboration between JoeyCooksFoods, Mama O’s and Bad Colours!

Ingredients:

  • 2 medium sized russet potatoes, peeled and cubed

  • 1 shallot, minced

  • 2 cups Mama O’s Kimchi, roughly chopped

  • 2 tbsp Mama O’s Kimchi sauce

  • 3 Italian sausages, hot or sweet, removed from casing

  • 2 tbsp olive oil

  • 4 large eggs,

  • ½ tbsp togarashi

  • salt and pepper to taste

Steps:

  1. Warm olive oil in a skillet and cook sausage until browned, 6-8 minutes. Remove sausage from the pan and add shallots, stirring constantly for about 1 minute. Add potatoes along with ¼ cup of water and stir to combine. Cover with a lid and cook for 10 minutes or until potatoes are soft. Add in kimchi, kimchi sauce and sausage to the potatoes and shallots. Stir to combine, salt and pepper to taste.

  2. Make 4 depressions around the pan and crack an egg in each one. Sprinkle with salt and togarashi and cover, cooking for 3-5 minutes depending on how well cooked you prefer your eggs.
