Method
Cooking the Bacon:
- Cook Bacon in a cold pan over medium/low heat. Cook for 10-15 minutes, turning occasionally until fully rendered. Set aside on a wire rack.
Assembling and Cooking the Sandwich:
- Start by spreading the peanut butter on one side of each slice of bread. Then, put a layer of banana slices on one of the bread slices, followed by a layer of bacon and a drizzle of honey. Close the sandwich, peanut butter side down.
- Melt butter in a skillet over medium heat and add in the sandwich, cooking each side for about 3 minutes each until golden brown and crusty.
- Cut the sandwich in half diagonally and serve immediately.
